Diapiro Calabaza Blanco 2021

Originating from our own vineyards, cultivated under a minimal intervention viticulture system, located in three plots in Artómaña, in the Arrastaria Valley. The soils are characterized by their alluvial and semi-deep nature, with a climate ranging between Atlantic and continental, depending on the harvest.The harvest is 100% manual, using 7 kg boxes. Pressing is done in a low-performance horizontal pneumatic press (55% Max). Fermentation takes place in 1,000L stainless steel tanks, with aging on lees for 7 months.The wine exhibits a great complexity in its fruity aroma, with white fruits (pear and apple) and citrus (bitter orange) notes, complemented by bakery undertones. On the palate, it stands out for the volume developed during aging on lees, presenting an explosion of flavor, expressiveness, and tastiness while offering silky tactile sensations. There is a balance in the mouth between the acidity and the typical bitterness of the grape varieties.

Grapes: 80% Ondarrabi Zuri and 20% Petit Courbu.
