The harvest is done without destemming, and the grapes are macerated in amphora. Skin maceration of Sauvignon. These 1,200 bottles have nothing to do with the appellation, except for the desire to express Sauvignon in a different way. It is a white wine with tannic structure, with a spicy nose and palate.
