It comes from old vines with different soils. From clay to sandy loam and high areas with boulders. Poor in raw materials, with low yields but high quality.
Quality organic viticulture. Green pruning and weeding are carried out sparingly. Powdered sulphur and copper treatments are also carried out.
Partial destemming of the bunches. Alcoholic and malolactic fermentation takes place spontaneously with indigenous yeasts in conical vats with no temperature control.
It has generous fruit, silky tannins and a dry, tasty finish that makes it excellent in gastronomic combinations. On the palate, it's greedy and you don't want to stop.
Grape varieties: 85% Mencia, 15% others (Golello, Doña Blanca, Palomino, Alicante, Bouchet, etc.)
