Chardonnay in Overnoy-Crinquand is fermented in wood where malolactic fermentation also takes place; the aging process occurs in 500-600-liter barrels. The wine spends a minimum of two years in oak barrels before being bottled; minimal SO2 is used during the aging process. The wine showcases excellent and firm acidity, with a full-bodied mouthfeel and pronounced honey notes in both aroma and flavor. It is refined with a persistent finish dominated by minerals.
